i just posted a photo of my spiced apple pie cupcakes and i thought i'd share the recipe with you guys! this particular recipe makes 12.
INGREDIENTS!
(for the cake)
- 50g softened unsalted butter
- 70g demerara sugar
- 1 lightly beaten egg
- 150g plain flour
- 1/2 teaspoon ground mixed spice
- 1 1/2 teaspoon baking powder
- 1 large peeled cooking apple, cored and finely chopped
- 1 tablespoon orange juice
- 40g plain flour
- 1/2 teaspoon ground mixed spice
- 40g caster sugar
- 25g unsalted butter
METHOD!
- preheat the oven to 180oC/350oF/gas mark 4 and put 12 paper cases in a muffin tin.
- to make the topping, place the flour, mixed spice and caster sugar into a bowl. add the butter and rub in with your fingertips until the mixture resembles bread crumbs. set this aside.
- cream together the butter and demerara sugar until pale and fluffy. gradually beat in the egg. sift in the flour, baking powder and mixed spice and fold into the mixture, then fold in the apple chunks and the orange juice.
- spoon the mixture into the paper cases. sprinkle over the topping onto the cupcakes and press down gently.
- bake in the preheated oven for 30 minutes, or until golden brown. leave the cupcakes in the tin for 5 minutes, then serve warm or transfer to a wire rack and leave to cool.
